nmz787_idelinquentme: really depends what you're interested in... maybe look into the polarization of the light reflected off the skin? electrochemical seems like you might get something to work... like have a signal/frequency generator, pass that to an electrode on the skin, have a sensing electrode nearby that goes to an ADC, then sweep the frequency on the sig-gen and look to see if the power vs freq changes through time (i.e. sweating)12:53
