13:44 < docl> one thing I like about a kombucha scoby is how it makes culturing harder to screw up, as the cellulose provides a protected environment and a physical barrier to mold and so on by the time a few days have passed. you sort of need the sweet tea to be sterile when you first start, but if you get mold you can skim it off and be fine typically
